I have dusted down my old toasted sandwich maker and am intent on reliving some old culinary memories.

Really has to include cheese. A spoon of left over bolognese or chilli with cheddar is a wonderful thing. Got one of the 'panini press' type ones (from Aldi) works well with thicker breads and even the Lancashire Oven Bottom Muffin or Barm.
Chilli jam, red onion , jalapeños and tomatoes (fresh or sun dried) all add a bit of zing too. | | | |
